Tortellini Soup with Sweet Italian Sausage

Approximately 4 Servings
INGREDIENTS
· Sweet Italian Sausage (I use Johnsonville) If in encasing, remove from encasing.
· EVOO (3-4 Tablespoons)
· Chopped Garlic (1-2 Tablespoons)
· Chopped Shallot (½ Tablespoon)
· Fresh Spinach (4-5 Handfuls)
· Carrots (1-2 Cups Chopped)
· Basil (1 Tablespoon)
· Italian Seasoning (1 Tablespoon)
· Garlic Salt (5-6 shakes)
· Onion Powder (1 Tsp)
· Salt (to taste)
· Crushed Red Pepper (a few shakes)
· Chicken Stock (5-6 Cups)
· Beef Bouillon (Single)
· Marsala Wine (Approximately 1/4 to 1/2 Cup) This can be optional but really adds to the flavor
· Tortellini (Approximately 2 Cups) I use Spinach Tortellini, but you can use Sausage or Cheese. Whatever your preference!
DIRECTIONS
· To a soup pan, heat EVOO over medium high heat and sauté Sweet Italian Sausage, until cooked, browned, set aside. on each side Set aside.
· Add to the pan some additional EVOO over medium heat. Saute the Garlic, Onion and Carrots for a minute or so. Don’t allow the Garlic to burn.
· Add the Chickens stock.
· Add in the seasonings.
· Bring to a boil and add the Beef Bouillon.
· At this point you’ll want to start tasting it until the flavor is to your liking, perhaps adding more of the seasonings.
· Add the Tortellini and continue to cook until desired consistency. A minute or so prior to readiness, add the Spinach and Sweet Italian Sausage
