4 Chops/Servings

INGREDIENTS

·      Pork Loin Chops – Thinly Sliced (You can as well use regular sliced, I prefer thin)

·       2-3 Eggs

·       Lemon Juice – approximately 1 TBSP

·       Italian Bread Crumb – 3-4 Cups

·       Flour – 3-4 Cups

·       Salt and Pepper – a 2 TSP of each, give or take

·       Italian Seasoning – 1-2 TBS

·       Basil – 1 TBSP

·       Oregano – 2 TSP

·       EVOO – enough to cover a pan to fry the pork chops. You don’t want the oil to cover the pork chops, just enough for maybe a ½ of oil covering the pan

 DIRECTIONS

·      Place the Flour and Bread Crumb on plates. I typically just use paper plates.

·      To the Flour add the Salt & Pepper

·      To the Bread Crumb add the Italian Seasoning, Basil and Oregano

·      Whisk the eggs and lemon juice in a bowl.

·      Place the Pork Chops one by one in the Flour mixture, coating each side. This is called dredging.

·      Dip the Port Chops one by one in the egg. Shake the Chop a bit.

·      Dredge the Pork Chops one by one in the Bread Crumb mixture, coating each side.  Same as the process with the Flour.

·      Heat EVOO in a pan on medium high heat.

·      Place the Pork Chops in the oil and fry each side until done.  It is typically 4 or so minutes each side, but that will vary.  The color should resemble the photo!

BON APPETIT!
